Today we will be talking about the undisputed king of spices… BLACK PEPPER (Piper nigrum).

Often paired quietly with table salt, black pepper is actually a powerful bioactive spice in its own right. Used for thousands of years in traditional Ayurvedic medicine and global culinary history, black pepper is far more than a simple heat enhancer; it is the ultimate "bio-enhancer" of the spice world.

HISTORY

Known as "Black Gold" during the ancient spice trade, black pepper is native to the Malabar Coast of India. It was so valuable in ancient times that it was used as currency and demanded as ransom by invading armies. From ancient Egyptian mummification rituals to Roman banquets, black pepper traveled across trade routes to become the most widely traded spice on the planet.

The secret behind black pepper's superpowers lies in an active alkaloid compound called piperine.

BLACK PEPPER & HERB MARINADE RECIPE

This simple pepper-forward marinade turns simple proteins or roasted vegetables into an antioxidant-rich feast:

 1 tbsp whole black peppercorns (coarsely cracked)

 4 garlic cloves (minced)  

 1 tbsp fresh grated ginger  

 2 tbsp olive oil

 1 tbsp fresh lemon juice  

 1 tbsp Konay Herb'ert blend (or Golden Girl for a warm turmeric twist)  

Combine all ingredients in a bowl, rub over chicken, tofu, or veggies, and marinate for 30 minutes before grilling or roasting.
